Pear & Dark Chocolate Cake
This is one tasty cake.. The best thing about this recipe is that I tried many different versions and every time I am surprised how good it always taste! I have tried zucchini, beetroot, apples and berries.... With butter or oils, with syrups or sugar.... All delicious.
So please, try with the fruit, or even veggie that is in season !
180g organic farmers butter, melted (vegan option: half olive oil/half coconut oil)
250g organic brown sugar
450g soft pears, chopped in small cubes
120g dark chocolate (I used 80%), chopped into small pieces
175g buckwheat flour
175g rice flour
1 tsp baking powder
1 tsp salt
1 tsp bourbon vanilla
1 splash plant milk (oat or rice) about 1/2 cup
90g dark chocolate
1/3 cup coconut milk
Melt together and cover the cake when done.
Preheat oven to 170°C.
Mix all the ingredients in a bowl and add to your optional shape of baking form - round or bread loaf.
Bake in the oven for 55mins.
Let sit for 30 min at least, before serving for a more moist result.
